Alex Herbert “fell into” cooking while taking a gap year from studying a history honours degree at Sydney University.
Since taking up a role as apprentice chef at Berowra Waters Inn, working alongside Janni Kyritsis and Gay Bilson, Herbert has worked with the likes of Christine Manfield, David Thompson, Martin Boetz and Tasting Australia Patron Maggie Beer.
She opened her restaurant, Bird Cow Fish in Surry Hills in 1996, serving real, classic food that’s not too fancy, but uses old-school, homely techniques.
All Herbert really wants people to experience in her restaurant is “really good food and really good service”, using Australian produce, seasonal ingredients and a whole lot of respect for what goes on the plate.
