Zelmai and Farida Ayubi migrated to Australia from Afghanistan with their young family in 1987 at the height of the Cold War. After settling, the Ayubi family established Parwana as a way to share an authentic piece of Afghanistan culture and history.
Chef Farida abides by the Afghanistan hospitality she remembers: gregarious, generous and endless. Her style of cooking recalls memories of watching her family’s chef prepare heaped platters of long-grain rice decorated with jewel-like toppings. She learnt to fold dumplings and to season sauces to perfection while also acquiring the gift of balancing spices with ease.
In Afghanistan meals are a ritual combining family, friends and culture – exactly as Parwana recommends enjoying their inimitable meals.
