David Swain is arguably is South Australia’s most adored regional restaurateur. His love of fresh, seasonal produce pioneered a new appreciation of exceptionally regional-focussed food.
David Swain from any early age had a relationship with food that is found naturally in only a special few. Rising to the elite restaurant level in his home town of Adelaide, David locked eyes with wife-to-be Sarah at Mistress Augustine’s, travelled through European kitchens, before finding himself in high profile stints in Melbourne, including under star chef Jeremy Strode at the Melbourne Wine Room.
Crossing the border back to South Australia to Port Willunga’s Star of Greece, Swain met Sharon Romeo who brought to life Swain’s appetite for brilliance onto the tables of patrons. After Swain’s move to the Salopian Inn, Swain and Romeo teamed up to transform a tired Willunga restaurant into the widely acclaimed institution that is Fino, before launching its incarnation at the redeveloped Seppeltsfield Winery.
Making sure regional produce shines, Swain focuses on finding the best regional produce by knowing the growers and their produce cycles intimately, flipping menus to represent his seasonal sourced ingredients. These long-forged relationships, both with Romeo, staff and growers, is how Swain consistently delivers innovative, yet simple dishes to captivated customers.
Sarah has been involved in traditional sourdough baking at Dough (Central Market) and Market St Patisserie. The Swains have used their collective talents to showcase the many gifts of the fertile Adelaide food bowl.
