Chef Josh Niland developed his love and appreciation for seafood during his years in some of the busiest kitchens in Sydney.
An accomplished chef, it was always the fish section that stole his heart. Now in his first solo venture Saint Peter in Sydney’s Paddington, Niland is passionate about serving ALL elements of the fish in the most delicious of ways. Such is his dedication he even built his own customised chill room to age seafood correctly.
He has worked previously for Glass Brasserie, Est. Restaurant, spent time in the development kitchen at The Fat Duck in the UK, The Woods Restaurant & Grain Bar and was head chef at Fish Face before starting up Saint Peter.
