Adelaide's vegan queen
Jyoti Bindu has become a champion of vegan and vegetarian dishes through her creative and impressive menu at Adelaide’s Pollen 185. That said, meat-eaters are often more than satisfied by the variety and substantive nature of Bindu's offerings.
Bindu cooks what she likes to eat, and that includes incredibly tasty baked mushrooms in neapolitan sauce with a housemade vegan bechamel, hearty warm kale and tahini salad with all sorts of satisfyingly crunchy nuts and seeds, and soups that have locals flocking. Her non-dairy milks – in particular the almond, brazil and cashew (ABC) – have also been a revelation.
