Lennox Hastie is a chef who is drawn to an open flame – cooking over one, that is.
Whether that be a small venue in the Spanish Basque mountains or in Michelin star restaurants across Europe and the UK, Hastie has learned to push the boundaries of what can be cooked on an open flame alongside Victor Arguinzoniz at Asador Extebarri, which was listed in the World’s 50 Best and earned one Michelin star while he was there.
Over the past few years, Hastie has explored the flavour profiles of different Australian woods and produce, before setting out on his current adventure, Firedoor in Surry Hills.
