Tradition meets new world in Istanbul
Born in Finland to a Turkish father and Finnish-Swedish mother, Mehmet Gürs grew up in Stockholm and Istanbul. He spent eight years in the U.S. before ‘kicking off’ the contemporary restaurant scene in Istanbul when he returned from the US to start his first restaurant in 1996. He is most known for Mikla and the introduction of the “New Anatolian Kitchen”.
Mehmet is credited with taking traditional and noble products and transforming them with a blend of new and ancient techniques. His approach includes years of extensive research with a team of chefs, a full-time anthropologist, villagers, mothers and grandfathers building cooperation among community and chefs.
Mikla has graced the World’s 50 Best Restaurants extended list since 2015 and currently sits at number 51.
