Rodolfo Guzman is a natural creative. He invented the word Borago’ (accent included) to reflect his passion for creating dishes from lesser-known wild ingredients picked from all over Chile. The beauty of Borago’ is the ability to adapt and reinvent somewhat unassuming, or even slightly unappealing, products and make them into something special.
Guzman first studied in Chemical Engineering and Bioprocesses before working at Mugaritz in the Basque country in Spain. He then returned to Santiago in the south of Chile to realise the unique project celebrating the local and traditional flavours of his homeland. If ever there were a time to try sea asparagus, beech dill, conger eel or donkey’s milk, it’s in the hands of Guzman.
