With a CV that includes the likes of Cumulus Inc., Cutler &Co, Supernormal, Universal, Meatsmith and The Town Mouse, you’d expect big things from Thi Le.
But her career could have easily taken a very different turn, if she’d had her wish of opening up a charcoal chicken rotisserie shop. Luckily for us, Le’s first solo venture, Anchovy in Melbourne, turned out to be a revelation in Vietnamese-Australian cuisine.
Le blends South East Asian flavours with traditional European techniques, and draws on her own Vietnamese heritage to create dishes that, according to Le’s former boss Christine Manfield, “show a true understanding of the craft.”
Anchovy was named best new talent by Gourmet Traveller in 2016, and is rapidly rising up Australia’s must-visit restaurant list.
