From running her busy restaurant The Salopian Inn to being one of this year’s Tasting Australia ambassadors, Karena Armstrong is enjoying a soaring phase of her career.
Monday night’s sold out event at the Town Square Glasshouse Restaurant, at which Fleurieu-based Karena joined forces with NSW chefs Analiese Gregory (Bar Brose) and Josh Niland (Saint Peter), showed off their signature dishes within a four-course meal, and gave guests a small taste of what Karena provides at The Salopian Inn.
Each chef added flair to the menu, while also working in unison. The third course belonged to Karena, which encapsulated her embrace of seasonal ingredients and Asian flavours by using classic techniques.
Generous amounts of braised kangaroo tail from renowned South Australian producer Paroo was stuffed inside a sheet of rolled noodle dough, dressed in a bright master stock and roasted chilli oil, fennel flowers and mustard greens from Karena’s kitchen garden in McLaren Vale. The dish provided a true reflection of her food ethos and generous spirit.
This was only a taste; Karena has her plate full throughout the Tasting Australia program.
She is hosting the Heroine’s Table dinner on Thursday May 4 at The Salopian Inn, as well as featuring at the Heroines Soul to Glass function on Friday May 5 at Fall from Grace in Aldinga.
