Trailblazing chef Ayako Ito will explain how to make decorations almost too beautiful to eat, then demonstrate two classic Japanese dishes before they’re served for lunch. Your destination for the day is Marble Hill Cherries, which is set in one of the highest parts of the Mount Lofty Ranges at Ashton. Ito — a friend of the business — will work from the farm kitchen. To start you’ll learn simple techniques for exquisite Japanese table decorations to add style and authenticity when plating up. Next it will be time to watch Ito cook. She’ll prepare dishes using South Australian seafood and beef; you’ll enjoy both over lunch with a glass of Adelaide Hills wine, sake and Japanese tea to accompany. Each guest will go home with a pair of extra-long Saibashi cooking chopsticks. Ito co-ran the acclaimed Sakura Teppanyaki restaurant in Unley for 10 years, becoming Adelaide’s first female teppanyaki chef in the process. As part of this Tasting Australia experience you’ll also learn about Japanese table etiquette — customs passed down over thousands of years and used to show respect to chefs, hosts and fellow diners.
