You’ll delve into native foods with Yuandamarra of Red Centre Enterprises and chef Alana Brabin from If You’re Game. Learn what the traditional owners of this country ate before colonisation — and how it can now be translated into modern Australian fare. Your evening will begin with a Traditional Aboriginal Smoking Ceremony and a welcome platter of indigenous ingredients. You’ll hear about Red Centre Enterprises’ work with native produce, how it is used in community and their philosophy of ‘country to consumer’. Next stop is the kitchen, where Brabin will help you prepare recipes using a range of native ingredients. The freshest seasonal produce will be used; think dishes such as crocodile tacos with native lime salsa or venison and native rosemary carpaccio. Enjoy three deliciously different courses with boutique local wines.
