Mat Lindsay is a firm fixture on the Sydney culinary scene with time spent in the kitchens of Billy Kwong and Rockpool before his celebrated success at restaurant Ester in Chippendale, Sydney, known for his incredible wood fired dishes.

In 2018 Matt opened Poly in Surry Hills, the long-awaited sister restaurant to Ester. Matt was awarded 2018 Chef of the Year by Gourmet Traveller’s Restaurant Guide Awards and is a true innovator, who enjoys experimenting with new combinations of flavours.
