Oliver Edwards

After 10+ years working in acclaimed Melbourne restaurants, Oliver was lured to South Australia by the people, the produce, and the opportunity to head the kitchen at natural wine bar The Summertown Aristologist in the Adelaide Hills. 

The Summertown Aristologist is a community cellar door and restaurant focussed on local produce, much of it grown in their own veggie patch. Oliver and co-head chef Brianna Smith make their own bread, butter, cheese and salumi in-house. They create a weekly-changing menu of minimal intervention, vegetable driven dishes that are a combination of years of experience, a continual desire to learn, and the utilisation of what they have at hand in a way that is both hyper-seasonal and hyper-local. 

Oliver was nominated for Best New Talent at the 2019 Gourmet Traveller restaurant awards. The Summertown Aristologist has achieved a chefs hat in the national Good Food Guide, a 1star-rating from Gourmet Traveller, and was listed by the Weekend Australian Magazine as one of their Hot 50 restaurants. 

Oliver is also a passionate sustainable seafood advocate. He runs the website GoodFishBadFish.com.au and is an ambassador for the Fair Fish community supported fishery.
