This decadent brunch was made to honour the mothers in our lives. Toast them with the finest fizz from near and far.

On the Town Square Kitchen menu: four indulgent courses, all paired with bubbles, from a trio of chefs led by Tasting Australia co-director Darren Robertson. Expect innovative dishes enlivened with the very best local produce – the same style of fare that has made the Byron Bay local such a prominent national name in cooking. A relaxed, elegant Mother’s Day celebration awaits.

Robertson will share the pass with festival Food Curator Emma McCaskill, a South Australian trailblazer whose experience spans venues including Penfolds Magill Estate, The Pot and Sparkke at The Whitmore. The duo – long-time friends who also worked together at Sydney fine diner Tetsuya’s a few moons back – will be joined by Small World Bakery’s Emily Salkeld, who fresh-mills whole grains to provide flour for her incredible Langhorne Creek loaves. Together these culinary dynamos are set to turn out a dining experience that truly befits a day of celebration.

Our menus utilise regional produce at the height of its season and take months of careful planning. Many of the dishes featured will not be adaptable for particular dietary requirements.
