The excitement of Tasting Australia is in its collaborations – the one-off menus that emerge when stars gather to create an unforgettable feast.
This dinner will see festival co-director Karena Armstrong (The Salopian Inn) craft four courses alongside Ben Devlin (Pipit, New South Wales) and South Australia’s Kane Pollard (Sôl Rooftop Restaurant and Bar & Topiary). Settle in for delicious dishes that maximise local produce and use ingredients often overlooked amid the bustle of a busy kitchen. Armstrong, Devlin and Pollard are passionate about curbing food waste and showing how less familiar fare shines in deft hands.
Armstrong’s McLaren Vale restaurant continues to deliver a standout regional dining experience. Its seasonal menu only includes elements made in-house and sings with local supplies, many grown in her on-site kitchen garden.
Devlin opened Pipit after five years at the celebrated Paper Daisy at Cabarita Beach. The restaurant eschews the formality of his fine-dining background, instead taking inspiration from its coastal sense of place.
South Australian Pollard grew up involved in his family’s market-gardening business, an experience that sparked an appreciation for provenance and sustainability. The SkyCity Adelaide restaurant he leads today continues to feature local ingredients at their peak.

Town Square is set to turn it on once again, this time with new culinary surprises adding to the fun.
Our menus utilise regional produce at the height of its season and take months of careful planning. Many of the dishes featured will not be adaptable for particular dietary requirements.
