Discover a new side to figs – one far beyond their flavour profile when fresh. Go to the other side of this ancient fruit through the lens of fermentation.
Glen Ewin Estate creates a wine, a sparkling and a spirit with three different fig varietals from its 12,000-fig tree orchard in Houghton, north-east of Adelaide. This curated tasting progression will illuminate the characteristics of each varietal portrayed three ways.
Go from the light side to the dark side, learning how fruits are fermented on skins to extract their full flavour and colour. The tasting will culminate with Spirit of Fig, awarded bronze in the fruit liqueur category at the latest Tasting Australia Spirit Awards.
Owner and distiller Willa Wauchope from Pot & Still will guide you through this progression alongside Glen Ewin Estate executive chef Jason Theng, who is set to create dishes complementing the unique experience.
- Food: four-course dinner
- Beverages: paired fig beverages with each course, including fig ‘wine’, fig ‘sparkling wine’, fig vodka. A total of three wines, three sparklings, three spirits and one Spirit of Fig.
