With experience in some of Australia’s more notable restaurants; Mr Wong, Ester and Sixpenny, it was these formative years that helped Ollie Wong-Hee develop disciplines, skills and a true, love for food. But in particular his time living and working at Franklin in Tasmania, has gone on to heavily influence his considerate
approach to food, cooking and hospitality at Bar Heather. Now located in Northern Rivers of NSW he continues to work intimately with organic farmers, fisherman and purveyors showcasing the produce of the region. A style of food that showcases the quality of the produce whilst reflecting and expressing the cultural diversity of Australia through his cooking.
Since Bar Heathers opening Wong-Hee was awarded Gourmet Travellers 2023 best new talent, and along with the Bar Heather team was awarded Good Food Best New Regional Restaurant 2023, whilst maintaining in the Good Foods Top 25 best restaurant for NSW since its opening 2 years ago. After being invited to cook alongside David Verheul in the iconic Melbourne restaurant Embla earlier this year for Melbourne Food and Wine Festival 2024, Ollie is honored and excited to now be a part of Tasting Australia 2025 and to cook in South Australia for the first time working and cooking with its quality produce.
