At 18, Paul Stone moved out of home in Melbourne and headed to Far North Queensland, where he kick-started his career with an apprenticeship at Nu Nu in Palm Cove under the guidance of chef-owner Nick Holloway. After a formative six years, he left Nu Nu as head chef, returning to Melbourne in 2011.

In Melbourne Stone worked with Geoff Lindsay as head chef at Dandelion, as well as for Andrew McConnell’s Trader House Group at Luxembourg and Supernormal.

In 2017, Stone and his partner Matilda Innes relocated to her hometown of Coonawarra to help run their family company Ottelia, a wine business and restaurant. Stone now heads up the kitchen, delivering big on flavours and over-delivering on dad jokes and cheesy puns. Central to his ethos are the kitchen garden, local produce, reducing kitchen waste and working with the seasons. He is passionate about the Limestone Coast and working directly with producers.
