Bust out the big guns and impress Dad this Father's Day with Darren Robertson's Lobster, greens and XO butter recipe.
TIP: The XO butter works well with bugs, prawns or pipies too.
Recipe by Tasting Australia's Food Curator Darren Robertson
- 2 lobsters split in two
- 1 hand full of greens, shallots, rainbow chard and spinach work well
- 1 clove garlic
- 1 shallot
- 1 knob ginger
- 1 tbsp dried scallop
- 1 tbs dried prawn
- 1 large red chili
- 10g prosciutto
- 120g butter
- 1 tbls sesame oil
- 1 tsp honey
- 1 tbsp soy
- 2 limes
- Handful coriander
Finley chop the garlic, shallot, ginger, scallop, prawn prosciutto and half of the chili (chop the rest for garnish).
Fry off in the foaming butter and sesame oil until lightly golden.
Season butter with honey, soy and lime juice.
Steam the lobster, cook the greens on a char grill.
Put the lobster in a big bowl, top with the charred greens, pour over the xo butter and garnish with coriander, chili and fresh lime.
