Ella Hoban’s winemaking journey was shaped by the rolling vineyards of the Adelaide Hills, a region she now proudly calls home. Growing up surrounded by South Australia’s renowned wine regions - McLaren Vale, Barossa, and the Hills - she developed an early appreciation for great wine, nurtured by family traditions and bottles from her grandparents’ cellar.
Her passion for wine led her to study winemaking at the University of Adelaide. She gained hands-on experience working in cellar doors for Hahndorf Hill and La Prova before completing her first vintage at Bleasdale Wines in Langhorne Creek. She then spent three years at Revenir Winemaking in the Adelaide Hills, working with a diverse range of varietals, including white and sparkling wines. Seeking to broaden her expertise, she worked vintages in Napa Valley and Spain’s Montsant Valley before returning to South Australia, where she joined Sidewood Estate in 2018 and played a key role in launching their internal sparkling wine program.
In 2020, Ella joined Accolade Wines, where she now leads the sparkling portfolio in her role as Global Group Sparkling Winemaker. Mentored by industry legend Ed Carr, she spent years working on House of Arras wines, refining her craft in Traditional Method sparkling winemaking. Today, she works with fruit from Tasmania, King Valley, Orange, Tumbarumba, King and Alpine Valley’s and the Adelaide Hills, crafting wines that reflect their unique terroir.
Beyond the winery, Ella is passionate about shaping the future of the industry. She co-founded Wine Biddies, a networking and mentoring program supporting young women in wine and plays an active role in wine show judging and industry initiatives.
