Originally from France and now based in South Australia, Mathilde works across both vineyard and hospitality, moving between vineyard work in the Adelaide Hills and the restaurant floor in Adelaide’s CBD.
In hospitality, Mathilde works at A Prayer for the Wild at Heart, where she is involved in a thoughtfully curated wine program focused on producers, balance, a strong sense of place and seasonality. The restaurant’s wine list was recognised with Best Wine List (up to 200 wines) at the 2025 Australian Wine List of the Year Awards. Through this work, Mathilde brings careful observation and attention to detail to the wine list, with a focus on translating complex ideas into accessible, meaningful wine experiences for guests.
Alongside her restaurant work, Mathilde is expanding her practical experience in biodynamic viticulture at Mt Bera, deepening her understanding of farming decisions and their impact from vineyard to bottle. With a strong interest in sustainable, organic and biodynamic practices, she is committed to approaches that respect site, vine health and the wider ecosystem around the vineyard.
She is currently undertaking advanced wine studies with a particular focus on Champagne wine, exploring how history, geology, climate, viticulture, tradition and time come together to shape style and identity.
She is passionate about connecting what happens in the vineyard with what ends up in the glass, and sharing that story in a way that feels generous and engaging.
