A regional culinary residency presented as part of Tasting Australia presented by Journey Beyond

The opportunity

What happens when an international chef discovers South Australia from the ground up?

Tasting Australia is inviting South Australian regions to open their doors, share their tables and inspire an extraordinary culinary residency.

An internationally acclaimed chef from a Michelin-starred restaurant will spend time alongside a leading South Australian chef, meeting the growers, producers, fishers, winemakers, tourism operators and local characters who shape your region.

The residency will culminate in a Tasting Australia Signature Dinner in Town Square, shaped by the featured region and bringing its people, produce, landscapes and stories to an audience of food and drink lovers, industry leaders and media.

Who should apply

South Australian regions with a distinctive food and drink identity, strong industry collaboration, compelling visitor experiences and the capacity to deliver the residency.

Why participate?

Borrowed Ground is more than hosting a chef. It is an opportunity to bring regional partners together, create compelling destination stories and give audiences another reason to visit.

  • Destination exposure: Position your region and participating businesses within a major South Australian food and drink event.
  • High-value content: Generate photography, video and social content that can support your region’s own destination marketing.
  • Industry connections: Connect regional producers and tourism operators with South Australian chefs and international culinary talent.
  • Product development: Encourage collaboration across food, drink, accommodation and visitor experiences.
  • Regional storytelling: Translate your region’s identity into a Signature Dinner that brings its story to a broader audience.
  • Lasting value: Build relationships, knowledge and opportunities that can continue beyond the residency and festival.

What we are looking for

All South Australian regions have stories worth sharing. We are looking for a proposal that reveals what could only happen in your part of the state: the grower who knows every inch of the land, the producer doing things differently, the winemaker, fisher, chef or local character who gives the region its flavour, and the landscapes and experiences that shape each plate and glass.

Show us the experiences that bring these elements together and would make an international chef stop, look closer and want to know more.
