Madame Hanoi head chef Sean Thomas will showcase authentic flavours across a five-course menu, with each course highlighting a different Vietnamese region. Thomas, whose culinary background includes time at Melbourne restaurants including the South East Asian-inspired GingerBoy, will draw on his own travels as inspiration for each dish. And to drink? The expert in-house bar team will pair a cocktail or glass of wine to every course.
