Give it a year. One cycle around the sun to pickle and preserve, farm and forage. Then settle in for lunch, an occasion to be shaped by chefs who share South Australia as muse.
Each will offer their take on seasonal abundance: summer peaches and tomatoes, spring peas and broad beans – ingredients harvested at their peak and made even better with time. Bottles, jars, cured meats and fermented sauces. Kitchen alchemy at its finest.
Leading the journey are three of the state’s most exciting chefs: Tasting Australia festival director Karena Armstrong, together with Fabian Lehmann and Tom Tilbury.
Armstrong has led McLaren Vale’s acclaimed Salopian Inn for the past decade. She continues to champion regional producers and their craft, also serving as a mentor to emerging culinary talent.
Simple, clean flavours meet European precision at the nearby Maxwell Restaurant, where Lehmann is approaching a decade at the helm. The venue – recently named the state’s best by Gourmet Traveller – offers lavish degustations that shift with the seasons.
Producer-led fare is the foundation of Tilbury’s Gather brand, with a reputation honed through stints in Robe and McLaren Vale favourite Coriole. Rich nostalgia informs The Botanic Lodge, his latest project, an elevated all-day offering in the Adelaide Botanic Garden.
