Step into an immersive culinary journey that celebrates the deep heritage and evolving future of Australia’s native bush foods.
Hosted in the Food Innovation Lab at the Adelaide University’s Waite Campus, this unique experience weaves together culture, flavour, science, and storytelling—inviting guests to connect with country through food.
Guided by Yuandamarra and Nadia of Red Centre Enterprises, alongside renowned horticulturalist, and native food specialist Dr. Kate Delaporte, and hosted by Dr Tina Bianco Miotto, offering rare insight into the living knowledge embedded in native ingredients.
Through conversation and guided tastings, guests will explore four coastal and four inland bush foods, learning directly from Yuandamarra, Dr James Cowley, and Bill Hirt about their cultural significance, ecological context, and culinary potential.
At the heart of the experience is an innovative menu by acclaimed chef Karena Armstrong of The Salopian Inn, who brings contemporary finesse to native ingredients while honouring their traditional foundations. She will be joined in the kitchen by Bailey Strangways, emerging chef from FINO Seppeltsfield, for live cooking demonstrations that reveal both technique and intent.
Opening with a Welcome to Country and smoking ceremony at the newly opened Waite Campus Yarning Circle, followed by a guided walk-through The Aunty Lynette Crocker Healing Garden. From there, the journey continues indoors with tastings, storytelling, and culinary exploration—each moment designed to deepen understanding of the relationship between land, culture, and food.
