More than a decade has passed since Victor Liong opened the two-hatted Lee Ho Fook in Collingwood. It takes grit to stay in the game that long – and also to lead a successful expansion of the flagship to Sydney. Liong remains committed as ever, taking inspiration from his travels to reimagine classic Chinese dishes in a way that’s always of the moment. Complexity and diversity are evident here, with deference to the very best local producers.
