Every home cook has their classics. The tried and true – dishes so familiar you can make them from heart. Ready to liven things up?

This fun new series brings South Australian chefs and top local producers into Town Square to share their specialties. Grab a drink or bite to eat, then gather around shaded tables beside the Journey Beyond Lounge and see how it’s done. Game, focaccia, seafood, pickles, sausage and more will be in focus across free 45-minute sessions set to inspire your next kitchen triumph – and maybe even make it into high rotation.

Garden Focaccia with Nick Tadija

Bread somehow manages to be both staple and star. And it’s in this latter sphere that Nick Tadija weaves his magic, using seasonal vegetables from McLaren Vale favourite Down The Rabbit Hole in focaccia that’s a standout dish in its own right.

Tadija has spent more than 20 years in professional kitchens, gaining experience in Michelin-starred London restaurants and national cooking competitions before the Fleurieu Peninsula beckoned. A deep love and respect for Italian cuisine guide his work, together with an affinity for nature’s rhythms and the Slow Food movement. Be there as he crafts next-level focaccia and shows you how to recreate the magic at home.
