Life gave Peter Dredge one heck of a lemon. At 17 he was a promising athlete poised to chase an AFL career and study sports science. Then he was struck in the head by a discus while at an athletics event, losing not only a path forward but his hearing and balance.

It was years before winemaking emerged as a possibility. Originally work at Brian Croser’s Petaluma in the Adelaide Hills was just a job; by the time he left 12 years later it had become a calling.
Dredge moved to Tasmania and took a senior winemaker role with Bay of Fires before moving on to launch his own label – its name a play on wine’s restorative role and how fast fortunes can change. He sourced fruit from sites including Meadowbank in the Derwent Valley, ultimately becoming a joint partner in the winery alongside his fresh, textured Dr Edge pursuits. It’s these latter wines that will feature at East End wine bar Septimus, with Dredge to share standout bottles and stories from a life reclaimed.
