The language of wine is the language of the kitchen. Your favourite bottles likely draw on culinary references to describe flavour – hints of this, notes of that. But how best to explore the concept? Cue the Aroma Bar. This new addition to Tasting Australia will feature winemakers, distillers and sommeliers pouring drops that speak to a selection of featured ingredients. Experience a concentrated form, then find feature flavours in each glass.
Sydney star Caitlyn Rees will help shape the experience. She’s sommelier and wine buyer at Fratelli Paradiso, a role that followed her time at other city standouts including Momofuku Seiobo. Fun, accessible wine is a specialty of Rees, known for keeping an open mind on all things vino. She’ll be joined by wine communicator Cyndal Petty and wine waiter Chayse Bertoncello of Beaconsfield restaurant O.My – each offering up-to-the-minute intel on drops you need to try.
We’ll have three winemakers on hand – Tasmanian-based Peter Edge of Dr Edge and Meadowbank, Alkina’s Amelia Nolan and Guy Palmer-Brown of Aldinga label Mighty Isle – each sharing their wares and chatting through vinous nuance. They’ll be joined by Matilda Innes of Limestone Coast label Ottelia, known for standout wines made from prime parcels of local fruit. Alongside her is Alex Marchetti, co-owner and sommelier at McLaren Vale icon, The Salopian Inn. Renowned for his exceptional palate and sharp eye for emerging beverage talent, Alex has built wine lists that consistently earn prestigious accolades, including the coveted 3 Goblets in The Wine List of the Year Awards, with annual nominations across multiple categories.
Spirits haven’t been forgotten: the crew from Never Never is joining the fun to share flavour intel from their acclaimed McLaren Vale gin brand. It remains at the forefront of Australia’s boutique distillery scene, weaving seasonal offerings among a beloved core range.
This is for everyone who’s pondered the way aroma works – and for all of us keen to choose and share drinks with a little extra flair.
