Not all hospo stars harness nature like this, linked by their passion for sustainable produce and a food system in balance Blayne of the O.My Brothers and Tom Campbell are a collision of culinary genius.
The O.My Brothers grew up in Beaconsfield and since 2013 have positioned their two-hatted bistro O.My as a fun, casual antidote to traditional fine dining. Its specialty: an elevated experience crafted from a farm-first approach. Fruit, vegetables, eggs and honey are grown on the brothers’ property, with meat and dairy sourced from small Gippsland producers and seafood from local fishers. Now they take the show on the road.
Campbell grew up on South Australia’s Fleurieu Peninsula and honed his craft in the fire-driven kitchens of Africola and IGNI before chasing opportunities abroad. Time in London’s Michelin-starred Leroy was followed by stints at Maos, Relae in Copenhagen, Japan and New York, then a return to local shores. He led the kitchen at Uraidla’s Summertown Aristologist and now co-owns acclaimed Piccadilly bistro Thelma, letting farm-fresh produce shine across its seasonal menu.
