Tasting Australia Club Series - Polish Club

You know the place but not the people. You know the building but not its bustle. Let’s change that. We’re going inside Adelaide’s treasured cultural clubs in celebration of all they offer – outstanding eating and drinking, sure, but also connection and new perspectives. Be there as top Australian chefs work the pass beside the cooks and volunteers who know it best, collaborating on meals to share stories of time and place. Welcome to the club.
Let it be known pierogi will feature. No visit to Poland would be complete without them – and that goes for Friday night at Adelaide’s Polish Club too. But there’s much more to this Central European nation than dumplings, delicious as they are, and we have the folk to prove it.

Diners at Adelaide Hills restaurant Ondeen know Wyszomirska from her role as wine room manager, responsible for stocking the restaurant with standout drops from Australia, Europe and further afield. Here she will be front of house, helping introduce the food of her homeland and ensuring beverages are on point.
Czulowski launched her culinary career from the original Fino Willunga alongside David Swain and Sharon Romeo. From there it was off to London, where she worked at the likes of Dinner by Heston and Noma before returning to South Australia and a head chef role at Africola. Today she’s group culinary director for the restaurant and its Norwood offshoot Africola Canteen, also working alongside her partner to craft meals for guests of Fleurieu Peninsula-based Off Piste Tours.
Decades of experience have made Stone one of Australia’s most versatile chefs. His home region of Margaret River offered early inspiration, with highlights to date including a head chef role at Joost Bakker’s Greenhouse Perth aged just 22. He continued working with the sustainability pioneer through the Future Food System project in Melbourne’s Federation Square and, more recently, has led three kitchens in northern New South Wales: You Beauty, the Eltham Hotel and Ciao, Mate!
Rounding out the lineup is Helyard, known for stellar work as head chef of Adelaide institution Peel Street Restaurant. Fresh, flavourful produce is his jam, often featuring in Asian fusion dishes but here heading deeper into the northern hemisphere.
